  • 2 medium yellow onions, peeled and chopped
  • 1 rib celery, chopped
  • 2 cloves garlic, peeled and finely chopped
  • 2 carrots, peeled and halved horizontally
  • 1½ cups (370 g) beef stock
  • 3/4 cup (180 ml) dry red wine
  • 1/2 cup (125 ml) tomato sauce
  • 6 peppercorns
  • 1/2 teaspoon dried oregano
  • 1 dried red chile pepper (seeded and chopped)
  • 2 whole cloves

Method

Step 1

In a large nonstick skillet, heat the oil over medium-high heat. Once it is hot, add the oxtails and brown on all sides.

Step 2
