Slow Cooker Greek Beef and Lentil Stew Recipe

Makes 6 servings

Ingredients: 1 pound (480 g) boneless beef eye of round, cut into cubes, 3 cups (750 ml) reduced-sodium fat-free beef broth, 14½ oz (435 ml) can diced tomatoes, undrained, 2 cups cubed Idaho potatoes, 2 cups green beans, cut into pieces, 1 cup dried lentils, 1 cup chopped yellow onion, 1 cup chopped green bell pepper, 2 teaspoons minced garlic, 1 teaspoon dried oregano,1 teaspoon dried mint leaves, 1/2  teaspoon ground turmeric, 1/2 teaspoon ground turmeric, and 1/2 teaspoon ground coriander, 1 cup cubed zucchini, salt and freshly ground black pepper, to taste

Instructions: In 6-quart (6 L) slow cooker, combine all ingredients, except cubed zucchini and seasoning. Cover the cooker and cook on low-heat setting for 6-8 hours, adding zucchini during the last 30 minutes.

Turn off slow cooker and open the led. Season cooked beef stew with salt and black pepper to taste. Stir well. Ladle beef stew into soup bowls. serve hot accompanied by toasted garlic bread.

Slow Cooker Easy Beef Stew Recipe


  • 2 pounds (960 g) boneless beef, cubed
  • 4-6 celery ribs, sliced
  • 6 potatoes, peeled and cubed
  • 2 yellow onions, peeled and sliced
  • 28 oz (840 ml) can tomatoes, undrained
  • 1/4 cup (60 g) minute tapioca
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried basil
  • 1 garlic clove, peeled and minced


Step 1

Combine all ingredients in a slow cooker. Cover and cook on Low 8-10 hours.

Step 2

Variations: Add 2 10½ cans beef gravy and 1/2 cup water in place of the tomatoes. Reduce tapioca to 2 tablespoons.
