Oven Baked Easy Brown Bread Recipe

Ingredients: 2 cups (500 ml) boiling water, 2 tablespoons unsalted butter, 2 teaspoons salt, 1 cup rolled oats, 2 tablespoons dry yeast, 1 cup (250 ml) warm water, 2 teaspoons granulated sugar, 2/3 cup molasses, 6 cups all-purpose flour

Instructions: In a large mixing bowl, combine unsalted butter, salt, and rolled oats. Mix well. Pour the 2 cups (500 ml) of boiling water over the rolled oats mixture. Set aside and cool to a lukewarm.

In a small mixing bowl, combine 1 cup (250 ml) of warm water and sugar. Mix well until sugar is dissolved. Stir in the yeast. Stir yeast mixture into cooled oat mixture. Stir in the molasses. Gradually add all-purpose flour.

Divide the dough in half. Shape it into loaves. Grease two loaf pans with nonstick cooking spray. Place the dough in greased loaf pans. Cover with a paper towel and let rise until doubled in bulk, for about 1½ hours.

Preheat the oven to 350ºF (175ºC). Bake in preheated oven for 45-60 minutes, or until a toothpick inserted in the center of the loaf comes out clean. Turn off the oven. Remove loaves from the pans and cool. Serve them warm.

You can also bake Boston Brown Bread in a slow cooker.

Slow Cooker Easy Brown Bread Recipe

Ingredients

  • 1/4 cup (60 ml) very warm (not hot) water
  • 1 package active dry yeast
  • 1/2 teaspoon sugar
  • 1/2 cup (125 ml) milk
  • 1 tablespoon unsalted butter
  • 1½ teaspoons salt
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons molasses
  • 1 cup whole wheat flour
  • 1/2 cup (125 ml) water
  • 2-2½ cups unbleached white flour

Method

Step 1

In a mixing bowl, combine the warm water, yeast, and 1/2 teaspoon sugar. Mix well and set aside.

Step 2

In a small saucepan, combine the milk, butter, salt, and sugar. Heat until butter melts, then pour in into a large mixing bowl.

Step 3

Stir in the brown sugar, molasses, whole wheat flour, and water. Stir in dissolved yeast.

Step 4

Add gradually 1 cup of the white flour while beating with an electric mixer. Beat for 2 minutes. Stir in enough additional flour to make a dough that pulls away from the sides of the bowl.

Step 5

Place the dough in a well-oiled baking pan intended for use in the slow cooker or well-oiled 2-pound coffee pan. Cover slow cooker and cook on high-heat setting for 2-3 hours.
