Slow Cooker Hungarian-Style Beef Stew
Serve this rich-tasting beef stew with warm crusty bread to soak up the delicious gravy.
Makes 6 servings
Ingredients: 1 pound (480 g) lean beef round steak, cut into thin strips, 1/2 cup (125 ml) reduced-sodium fat-free beef broth, 1/2 cup (125 ml) dry red wine, 1 can (8 oz (240 ml) tomato sauce, 1 pound (480 g) potatoes, peeled and cubed, 2 carrots, peeled and sliced, 2 ribs celery, 1 cup finely chopped yellow onion, 1 large clove garlic, peeled and minced, 1 teaspoon dried thyme leaves, 1 teaspoon paprika, 1 bay leaf, 1/4 teaspoon dry mustard, 1/2 cup (125 ml) reduced-fat sour cream, 1 tablespoon cornstarch, salt and freshly ground black pepper, to taste
Instructions: In a 4-6-quart (4-6 L) slow cooker, combine all ingredients, except sour cream, cornstarch, and seasoning. Cover cooker and cook on low-heat setting for 6-8 hours. Open a slow cooker and stir in sour cream and cornstarch. Cook, stirring continuously, for 2-3 minutes. Discard bay leaf. Season to taste with salt and black pepper. Stir well.
Ladle Hungarian beef stew into soup bowls. Serve hot.
Slow Cooker Beef Goulash Recipe
In Hungary, this delicious, paprika-seasoned beef stew is called gulyas. Serve it with dollops of sour cream.
Makes 4 servings
Ingredients: 1 pound (480 g) lean beef round steak, cut into cubes, 1 can 14½ oz (435 ml) diced tomatoes, undrained, 2 cups cabbage, coarsely sliced, 3 medium yellow onions, peeled and cut into wedges, 1 cup chopped Portabello mushrooms, 1 tablespoon paprika, 2 teaspoons caraway seeds, 1-2 tablespoons cornstarch, 1/4 cup (60 ml) cold water, 1/2 pound (240 g) medium egg noodles, cooked, warm, salt and freshly ground black pepper, to taste
Instructions: In 4-6-quart (4-6 L) slow cooker, combine all ingredients, except cornstarch, water, and seasoning. Cover cooker and cook on low-heat setting for 6-8 hours. Switch heat to high and cook for a further 10 minutes. Open the slow cooker and stir in combined cornstarch and water. Cook, stirring, for 2-3 minutes.
Turn off the slow cooker. Season to taste with salt and black pepper. Stir well. Serve over the cooked egg noodles.

Ingredients
- 2 pounds (960 g) round steak, cubed
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 ½ teaspoons paprika
- 10 ¾ oz (325 ml) can tomato soup
- 1/2 soup can water
- 1 cup (250 ml) sour cream
- 2 potatoes, peeled and cubed
Method
Step 1
Mix meat, onion, powder, and flour together in a slow cooker until the meat is well coated. Add remaining ingredients, except sour cream, and stir well.
Step 2
Cover slow cooker and cook on low-heat setting for 8-10 hours. Stir in sour cream 30 minutes before serving.
