Pressure Cooker Hawaiian Barbecue Chicken Recipe
Chicken breasts with barbecue sauce and pineapple chunks cooked in a pressure cooker. Mouthwatering recipe!
Makes 4 servings
Ingredients: 4 large boneless and skinless chicken breasts, cut into 1-inch (2.5 cm) cubes, salt, and freshly ground black pepper to taste, 1 tablespoon (15 ml) vegetable oil, 2 cloves garlic, peeled and minced, 1 cup (250 ml) BBQ sauce, divided, 8 oz (240 ml) can pineapple chunks, drained and juice reserved, 2 tablespoons (30 ml) cornstarch, 2 tablespoons (30 ml) water, 1/4 cup (60 ml) sliced green onions
Instructions: Season cubed chicken with salt and black pepper. Set aside. In an electric pressure, cooker turned to sauté function, heat vegetable oil. Add seasoned chicken and cook, stirring occasionally, for 1 minute, then stir in minced garlic and sauté for a further 1 minute.
Turn off the pressure cooker. Stir in 1/2 cup (125 ml) BBQ sauce and reserved pineapple juice. Close the instant pot and lock the lid. Set the machine to cook at high. Set the timer to cook for 3 minutes.
Turn off the instant pot. Using the Quick Release method, unlock and open the lid.
In a small mixing bowl, combine cornstarch and water. Mix until the cornstarch dissolved completely. Stir the cornstarch mixture into the cooking pot. Select the sauté function and simmer until the liquid thickens.
Add the remaining BBQ sauce and pineapple chunks to the pot and stir well to combine. Remove the chicken mixture from the pot and transfer to serving plates. Garnish with sliced green onions and serve over the cooked rice.

Ingredients
- 4-6 boneless and skiunless chicken breasts
- 1 bottle (250 ml) BBQ sauce
- 20 oz (600 ml) can pineapple chunks, drained
Method
Step 1
Grease the slow cooker with nonstick cooking spray. Place chicken breasts in the greased pot. Pour BBQ sauce over. Top with drained pineapple chunks.
Step 2
Cover slow cooker and cook on low-heat setting for 4-6 hours or until chicken is tender.
Step 3
Turn off the pot and open the lid. Stir the chicken mixture well before serving. Remove from the cooker and transfer to serving plates. Serve over the cooked rice.
