Chicken Corn Chowder Recipe
Makes 8 servings
Ingredients: 4 cups (1 L) chicken stock, 1 pound (480 g) boneless and skinless chicken breasts, cut into cubes, 3 cups (750 ml) whole kernel corn, thawed, 2 medium tomatoes, chopped, 1/2 cup chopped yellow onion, 1/2 cup chopped green bell pepper, and 1/2 cup chopped carrots, 2 teaspoons minced jalapeno chili, 2 teaspoons minced garlic, 1/2 teaspoon dried savory, 1/2 teaspoon dried thyme leaves, 1 cup (250 ml) 2%, reduced-fat milk, 2 tablespoons cornstarch, salt and freshly ground black pepper
Instructions: In 6-quart (6 L) slow cooker, combine all ingredients, except milk, cornstarch, and seasoning. Cover and cook on low-heat setting for 6-8 hours. Switch heat to high and cook for further 10 minutes. Stir in combined milk and cornstarch. Cook, stirring 2-3 minutes. Turn off slow cooker. Season to taste with salt and black pepper. Ladle chicken corn chowder into soup bowls. Serve hot.

A delicious chicken-vegetable chowder that uses canned and frozen ingredients.
Makes 6 servings
Ingredients: 2 cups (500 ml) chicken broth, 1 can (10¼ oz (307 ml)) low-sodium and fat-free cream of potato soup, 1 pound (480 g) boneless and skinless chicken breasts, cut into cubes, 1 cup sliced carrots, 1/2 cup (125 ml) Mexican-style whole kernel corn, 1/2 cup chopped yellow onion, 2 cloves garlic, peeled and minced, 1 teaspoon dried thyme leaves, 2 cups small broccoli florets, 1/2 cup (125 ml) 25 low-fat milk, salt and freshly ground black pepper
Instructions: In a slow cooker, combine all ingredients, except broccoli, milk, and seasoning. Cover slow cooker and cook on low-heat setting for 6-8 hours, stirring broccoli and milk during last 20 minutes. Turn off slow cooker. season chicken chowder with salt and black pepper. Ladle it into soup bowls. Serve hot.

- 1 pound (480 g) boneless and skinless chicken breasts, cubed
- 2 cups unpeeled potatoes, cubed
- 1/2 cup chopped yellow onion
- 2 teaspoons minced garlic
- 2 teaspoons minced jalapeno pepper
- 2 tablespoons cornstarch
- 1 cup (250 ml) low-fat milk
- salt and freshly ground black pepper
- shredded Parmesan cheese
Method
Step 1
In a slow cooker, combine all ingredients, except milk, cornstarch, cheese, and seasoning. Mix well.
Step 2
Cover slow cooker and cook on low-heat setting for 6-8 hours. Increase heat to high, cook for a further 10 minutes.
Step 3
Stir in combined milk and cornstarch. Cook,stirring,for 2-3 minutes. Season chicken corn chowder with salt and black pepper.
Step 4
Turn off slow cooker. Ladle chicken chowder into soup bowls. Sprinkle with shredded Parmesan cheese.
