Roasted Honey Glazed Chicken Recipe

Makes 2 servings

Ingredients: 2 boneless and skin-on chicken breasts, half of the lemon, 1 tablespoon (15 ml) clear honey, 1 tablespoon (15 ml) dark soy sauce, salt and freshly ground black pepper, to taste

Instructions: Place chicken breasts skin-side up in a small baking dish. Season with salt and black pepper.

Squeeze half of the lemon into a small mixing bowl. Add honey and dark soy sauce. Stir well. Pour honey-soy mixture over the seasoned chicken. Place the squeezed-out half of lemon between the chicken pieces.

Preheat the oven to 380º F (190ºC). Roast chicken in the baking dish, uncovered, for 30-35 minutes, basting with juices occasionally.

Turn off the oven and remove baked glazed chicken. Transfer to serving plates. Serve with vegetable salad and mashed potatoes.

Baked Honey Glazed Chicken Drumsticks Recipe

Makes 4-6 servings

Ingredients: 5 pounds (2.4 kg) chicken drumsticks, 3/4 cup (180 ml) clear honey, 1/2 cup (125 ml) soy sauce, 1/4 cup (60 ml) orange juice (without pulp), 2 tablespoons (30 ml) Dijon mustard, 4 garlic cloves, peeled, minced and finely grated, 1tablespoon ginger, peeled and finely grated, sesame seeds for garnish

Instructions: In a small mixing bowl, combine all ingredients, except chicken drumsticks and sesame seeds. Mix well, then reserve 2/3 cup (160 ml) of honey mixture, cover and refrigerate.

Place chicken drumsticks in a large Ziploc bag. Pour the remaining marinade over drumsticks and seal the bag. Refrigerate for at least 6 hours (overnight could be fine).

Preheat the oven to 400º F (200º C). Place a rack in the center of the oven. Line a large roasting pan with a parchment paper. Remove marinated chicken drumsticks from the refrigerator and arrange, skin-side up, on the lined roasting pan. Pour in enough marinade from the bag to just coat the bottom of the roasting pan.

Bake in preheated oven for 25 minutes.Flip chicken and bake for a further 20 minutes.

Meanwhile, pour reserved 2/3 cup (160 ml) marinade into a small saucepan. bring to a boil over medium-high heat, then reduce heat to low and simmer until thickened and syrupy.

Turn off the oven and remove baked honey glazed chicken. Transfer to a serving plate.

Remove the glaze from the heat and brush baked chicken. Sprinkle with sesame seeds. Serve hot.

Slow Cooker Honey Glazed Chicken Recipe

Ingredients

  • 2 pounds (960 g) boneless and skinless chicken breasts
  • 1/2 cup (125 ml) low-sodim soy sauce
  • 1/3 cup (80 ml) oyster sauce
  • 1/3 cup (80 ml) honey
  • 6 garlic cloves, peeled and crushed
  • 1½ tablespoons cornstarch
  • 3 tablespoons water
  • 1/4 cup sliced green onions
  • 1 tablespoon sesame seeds
  • salt and freshly ground black pepper

Method

Step 1

In 5-6-quart (5-6 L) slow cooker, combine soy sauce, oyster sauce, honey, and crushed garlic. Mix well.

Step 2

Place chicken breasts in the sauce and turn to coat.

Step 3

Cover the pot and cook on low-heat setting for 6-8 hours, adding combined cornstarch and water during the last hour.

Step 4

Turn off the slow cooker and open the lid. Season honey glazed chicken with salt and black pepper to taste. Stir well before serving.

Step 5

Remove glazed chicken and sauce from the pot. Transfer to serving plate. Sprinkle with sliced green onions and sesame seeds. Serve hot.
