Ingredients
- 1 pound (480 g) smoked cod
- 1 oz (30 g) unsalted butter
- 1 medium yellow onion, peeled and finely sliced
- 1 teaspoon curry powder
- 2 cups long grain rice
- 2 cups (500 ml) boiling water
- 2 hard-boiled eggs, quartered
- 1 hot pepper, seeded and thinly sliced (optional)

Step 1
Place smoked cod in a frying pan, cover with cold water and bring to a boil over medium heat. Cook for 5 minutes, then drain and flake it. Set aside.

Melt the butter in a frying pan over medium-high heat. Add onion and saute, stirring occasionally, until soft, for about 5 minutes. Stir in the curry powder and continue cooking and stirring, for a further 1 minute, or until fragrant.
Step 3
Add rice, mix well and fry, stirring, for a few minutes, or until the grains are coated and golden. Remove the rice mixture from the pan and transfer it to a slow cooker. Add boiling water and flaked cod. Mix well.

Cover the pot and cook on a high-heat setting for 1½ -2 hours.

When ready to serve, add quartered eggs, and sliced pepper (optional), then season to taste with salt and black pepper. Serve immediately.
