This queso dip is super tasty and can be made in just a few minutes! It has three very easy ingredients, and all you need is a slow cooker. This makes it a great option for game days, potlucks, holidays, or just a regular taco night. I got the idea to make it after someone brought a mini slow cooker full of queso dip to a potluck.
I had to get my mini slow cooker and figure out how to make queso dip in it so I could share my version. And here it is – super easy and delicious!

Queso dip is a special cheese dip from Mexico that is melted and cooked together. It can be spiced up with extra ingredients like chorizo or veggies, or just have a bit of extra flavor. You might have seen it at Mexican restaurants.
Making queso in a Crock Pot is a great idea – it gets a gentle heat and a great flavor from the salsa. It’s a delicious blend of cheese and spice!
Mexican Queso Dip Ingredients and Variations
This dip is super easy! You only need three things: shredded cheese, cream cheese, and salsa. Plus, you can make it your own with some cool ideas!
Choose your cheese! I picked Monterey Jack because it goes well with the other Mexican flavors in the dip. But Colby Jack, pepper jack, queso blanco, or cheddar also work well. Any semi-soft or semi-hard cheese that melts is perfect. Lots of people use Velveeta or white American cheese, but I like to use cheese that is less processed.
Pick your favorite salsa! I used salsa verde, but you can also use tomato salsa or tomatillo avocado salsa. You could even try a can of green chilis or Rotel. All of these would be yummy in this dish.
I suggest getting salsa that isn’t too chunky for queso dip. But you can have it chunky if you want. You can also blend it in a blender to make it super smooth. (I didn’t blend mine so the little pieces in the photos are from the salsa.)
Aromatics: For cooking aromatics, diced onions or garlic can be used. I suggest sautéing them before adding them to your dish. If you want to take a shortcut, you could use onion and garlic powder instead.
Diced Tomatoes: You can use either canned tomatoes or fresh tomatoes for your recipes. If you use canned, you need to drain them before using.
Spices: You can use canned green chiles instead of salsa. Remember to empty the cans before using them. Try using ground cumin, paprika, or chili powder to spice up your cooking! These are great options to add flavor to your favorite dishes.
Ground beef: Cook ground beef on your stovetop and add it to the slow cooker with the other ingredients to create a meaty dip!
For the vegetables (onion, tomatoes, peppers, etc.), you can blend them for a smooth cheese dip, or leave them diced for a crunchy texture.
How to Make Keto Mexican Queso Dip in a Slow Cooker
Are you ready for the easiest way to make the best Crock Pot Queso? It only takes two minutes and two steps!
Step One: Mix the ingredients. Put cream cheese, salsa verde, and shredded Monterey Jack cheese in the slow cooker and mix them.
Step Two: Cook. Put the slow cooker on the Low setting and cook for 2 1/2 hours. Remember to stir every 30 minutes to get rid of lumps.

Is Mexican Quesip Spicy?
This slow cooker queso has lots of flavor but it’s not too spicy. You can choose how much heat you want by picking a salsa that has the spice level you like. Use mild salsa to get a little kick, or more spicy salsa for more heat. It’s totally up to you!
If you want to make your salsa spicier, try adding some hot sauce, cayenne pepper, chili powder, or jalapeño slices. These will all kick your salsa!
Is Queso Low-Carb?

Ingredients
- 8 oz (240 g) cream cheese, cubed
- 12 oz (360 ml) salsa verde
- 1 cup shredded Moterey Jack cheese
Method
Step 1
In a slow cooker, combine all ingredients. Mix well.
Step 2
Cover the pot and cook on a low-heat setting for 2½ hours, stirring and whisking every 30 minutes, to avoid any lamps.
Step 3
Turn off the cooker and open th lid. Using an immersion blender, blend the dip until smooth. Serve with keto nachos.
