Ingredients
- 3 pounds (1.44 kg) chicken tenderloins
- 1/2 cup (125 ml) freshly squeezeed orange juice
- 1 teaspoon grated orange peel
- 3 tablespoons soy sauce
- 2 teaspoons freshly grated ginger
- 1 clove garlic, peeled and crushed
- 3 tablespoons cornstarch
- 3 tablespoons cold water
Method
Step 1
Rinse chicken tenderloins under running cold water. Pat dry with paper towels.
Step 2
Arrange chicken tenderloins in one layer in the slow cooker.
Step 3
In a small mixing bowl, combine orange juice, orange peel, soy sauce, ginger, and garlic. Mix well and pour the soy mixture over the chicken.
Step 4
Cover slow cooker and cook on low-heat setting for 4 hours or until chicken tenderloins are tender.
Step 5
Remove cooked chicken from the slow cooker and keep warm. Meanwhile, in a small bowl, dissolve cornstarch in water. Stir in the cornstarch mixture into cooking juices in the slow cooker.
Step 6
Cover the slow cooker and cook on the high-heat setting, stirring occasionally, for a further 10-15 minutes or until slightly thickened. Pour sauce over the cooked chicken and serve immediately.
