I’d like to say a few words about shiitake mushrooms.
The word “shiitake” is a Japanese word and means “shii”- oak and “take”-mushroom. They are fungi and don’t have any roots, leaves, flowers or seeds. These mushrooms are reach in pantothenic acid and selenium. They also contain riboflavin, niacin, zinc, manganese, and may help fight against bacterial, viral and different parasitic infections.
You can refrigerate fresh shiitake mushrooms in a paper bag up for one week. For the longer storage, consider freezing or drying them.

Slow Cooker Pork Belly with Shiitake Mushrooms

Ingredients
- 2 pounds (960 g) pork belly, cubed
- 10 oz (300 ml) can beef consomme
- 5-6 whole shiitake mushrooms
- 1 small yellow onion, peeled and chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon sugar
- salt and freshly ground black pepper, to taste
Method
Step 1
Lightly grease 6-quart (6 L) slow cooker with nonstick cooking spray. Place chopped onion on the bottom of the greased pot. Top with cubed meat.
Step 2
Add mushrooms, garlic powder, and sugar. Pour in the beef consommé, then season with salt and black pepper.
Step 3
Cover the slow cooker and cook on low-heat setting for 7 hours or until pork and mushrooms are tender.
Step 4
Turn off the pot and open the lid. Stir the mushroom-pork mixture well before serving. Transfer to serving plates. Serve hot.
