Ingredients
- 1 cup chopped yellow inion
- 1/2 cup (125 ml) chicken broth
- 3 pounds (1.44 kg) por loin roast
- paprika
- salt and freshly ground black pepper
- mustard sauce (see recipe below)
- Mustard Sauce:
- 1 cup granulated sugar
- 1/4 cup dry mustard
- 1 tablespoon all-purpose flour
- 1/2 cup (125 ml) cider vinegar
- 2 eggs, beaten
- 1 tablespoon unsalted butter
Method
Step 1
In a slow cooker, combine chopped onion and chicken broth. Sprinkle pork loin lightly with paprika, salt, and black pepper. Insert a meat thermometer in the center of the meat. Place pork in the slow cooker.
Step 2
Cover the slow cooker and cook on low-heat setting until the meat thermometer registers 160°F(78°C), about 4 hours. Transfer pork loin to a serving platter and let stand, loosely covered with aluminum foil, for 10 minutes. Strain chicken broth and onions.
Step 3
Spoon onions around pork(optional), reserving chicken broth for another use. Serve slow cooker pork loin with mustard sauce.
