Slow Cooker Sausage Gnocchi Soup Recipe

Ingredients

  • 1 large yellow onion, peeled and chopped
  • 3 celery stalks, chopped
  • 2 carrots, peeled and chopped
  • 3 garlic cloves, peeled and minced
  • 2 tablespoons tomato paste
  • 28 oz (840 ml) can whole peeled tomatoes
  • 15 oz (450 ml) can black beans, rinsed and drained
  • 4 cups (1 L) vegetable broth
  • 1 pound (480 g) cooked Italian sausage meat
  • 2 teaspoons dried oregano leaves
  • 2 teaspoons dried thyme leaves
  • 2 teaspoons dried basil
  • 1 pound (480 g) gnocchi
  • salt and freshly ground black pepper, to taste

Method

Step 1

In a 6-quart slow cooker, combine all ingredients, except gnocchi and seasoning. Stir well.

Step 2

Cover the pot and cook on low-heat setting for 6-8 hours or until vegetables and beans are tender.

Step 3

Add gnocchi. Cover the cooker and cook for a further 30 minutes or until gnocchi is tender.

Step 4

Turn off the slow cooker and open the lid. Season to taste with salt and black pepper. Stir the soup well before serving. Ladle into soup bowls. Serve hot.
