Slow cooker spinach-stuffed chicken recipe. Spinach-stuffed chicken breasts cooked in a slow cooker. This is one of my favorite chicken recipes, very easy to prepare and delicious! I used spinach and artichoke dip as stuffing.

Homemade Spinach Dip Recipe


Ingredients: 1 cup (250 ml) mayonnaise, 1 16 oz (480 ml) can sour cream, 1 2 oz (60 ml) package dry leek soup mix, 4 oz (120 ml) can water chestnuts, drained and chopped, half of 10 oz (300 ml) frozen spinach, thawed, drained, and chopped

Instructions: In a medium mixing bowl, combine mayonnaise, sour cream, dry leek soup mix, drained water chestnuts, and chopped spinach. Mix well, then wrap with plastic wrap and refrigerate overnight.

Classic Artichoke Dip Recipe

Ingredients: 2 cans (14½ oz (435 ml) each artichoke heart, drained and coarsely chopped,  2 (8 oz (240 ml)) packages of cream cheese, softened, 1 cup (250 ml) mayonnaise, 1 cup (250 ml) grated Parmesan cheese, 1 teaspoon (5 ml) garlic powder, parsley flakes, 1/2 teaspoon (3 ml) cayenne pepper

Instructions: Preheat an oven to 350º F (175º C). In a medium mixing bowl, combine cream cheese, mayonnaise, and Parmesan cheese. Beat until fluffy. Stir in seasoning and drained artichokes. Transfer the artichoke mixture into a casserole. Bake in preheated oven for 25-30 minutes or until bubbly and golden brown.

Slow Cooker Spinach-Stuffed Chicken Recipe

Ingredients

  • 6 boneless and skinless chicken breasts
  • salt and freshly ground black pepper, to taste
  • 28 oz (840 ml) spinach and artichoke dip

Method

Step 1

Spray inside a 3½-quart (3½ L) slow cooker with nonstick cooking spray. Using a sharp knife, cut a slit in the thick side of the chicken, creating a pocket. Season chicken breasts with salt and black pepper, including the inside.

Step 2

Stuff each seasoned chicken breast with spinach and artichoke mixture. Place in the greased slow cooker.

Step 3

Cover the pot and cook on a low-heat setting for 7-8 hours or until the chicken is tender.

Step 4

Turn off the cooker and open the lid. Carefully remove stuffed chicken from the pot and transfer it to a serving plate. Serve hot.
