Slow Cooker Spinach-Stuffed Chicken Recipe

Ingredients

  • 6 boneless and skinless chicken breasts
  • salt and freshly ground black pepper, to taste
  • 28 oz (840 ml) spinach and artichoke dip

Method

Step 1

Spray inside 3½-quart (3½ L) slow cooker with nonstick cooking spray. Using a sharp knife, cut a slit in the thick side of the chicken, creating a pocket. Season chicken breasts with salt and black pepper, including inside.

Step 2

Stuff each seasoned chicken breasts with spinach and artichoke mixture. Place in the greased slow cooker.

Step 3

Cover the pot and cook on low-heat setting for 7-8 hours or until chicken is tender.

Step 4

Turn off the cooker and open the lid. Carefully remove stuffed chicken from the pot and transfer to a serving plate. Serve hot.
