Slow Cooker Thai Turkey Meatballs Recipe
Ingredients
- 1²⁄³ cups (410 ml) unsweetened coconut milk
- 3 tablespoons peanut butter
- 2 tablespons soy sauce
- 2 tablespoons lime juice
- 1-2 tablespoons chili paste
- 2 cloves garlic, peeled and minced
- 14 oz (420 g) package frozen home-style turkey meatballs, thawed
- 1/2 cup chopped fresh cilantro or parsley
Method
Step 1
In a 4-quart (4 L) slow cooker, combine coconut milk, peanut butter, soy sauce, lime juice, chili paste, and minced garlic. Mix well, then stir in thawed meatballs.
Step 2
Cover the pot and cook on low-heat setting for 2½-3 hours.
Step 3
Turn off the cooker and open the lid. Using a slotted spoon, remoce cooked metaballs from the slow cooker and transfer to a serving plate. Pour the cooking liquid over. Serve over over cooked rice.
