Cooked Italian spaghetti with ham and peas. Very easy and delicious Italian pasta recipe!

How to Make Pasta with Ham and Peas

Makes 4 servings (recipe adapted from https://www.foodandwine.com/recipes/pasta-shells-peas-and-ham)
Ingredients: 1pound (480 g) uncooked small pasta shells, spaghetti, or elbow macaroni, 1 oz (30 ml) plus 1 teaspoon (5 ml) extra-virgin olive oil, 5 garlic cloves, peeled and thinly sliced, 10 oz (300 g) package frozen peas, thawed, 1/4 pound (120 g) thinly sliced country ham, 1ΒΌ cups heavy (double) cream, 1 cup (250 ml) chicken stock, 1/4 cup (60 ml) grated Parmesan cheese, 1/3 cup (80 ml) chopped fresh dill, salt and freshly ground black pepper, to taste

Instructions: Pour the water into a large pot. Add salt and stir well. Bring to a boil over medium-high heat. Add the pasta to the boiling water and cook, partially covered, until al dente.

Using a colander, drain cooked pasta, then return to the pot and toss with 1 teaspoon (5 ml) of extra-virgin olive oil to prevent sticking. Set aside.

Meanwhile, in a large nonstick skillet, heat the remaining extra-virgin olive oil over medium heat. Add sliced garlic and cook, stirring occasionally, until golden, for about 4 minutes. Stir in the peas and ham and cook, stirring occasionally, until the peas are hot and the ham is lightly browned, for further 5 minutes.

Pour in heavy cream and chicken stock. Mix well. Simmer over medium heat until slightly thickened, for about 5 minutes. Remove creamy sauce from the heat and stir it into cooked pasta or spaghetti.

Add grated Parmesan cheese and chopped fresh dill. Season to taste with salt and black pepper. Divide pasta with ham and peas between 4 serving bowls. Serve immediately.

Ingredients

  • 8 oz (240 g) package spaghetti
  • 1/4 cup butter or margarine
  • 1 tablespoon all-purpose flour
  • 1Β½ cups (370 ml) half-and-half or light cream
  • 1/4 teaspoon salt
  • 10 oz (300 g) package frozen peas
  • 1 cup shredded Fontina cheese
  • 1 cup shredded mozzarella cheese
  • 4 oz (120 g) package sliced cooked ham,cut into 1/8-inch strips

Method

Step 1

Prepare spaghetti as label directs (boil in salted water). Drain spaghetti in a colander and keep warm.

Step 2

Meanwhile, in a large saucepan over low heat, melt butter; stir in flour, salt, and pepper; gradually stir half-and-half and cook, stirring until thickened. Add peas and cheeses, stirring until cheeses are melted; stir in ham and heat. In a large bowl, toss spaghetti and cheese mixture until spaghetti is well coated and serve spaghetti with ham and peas immediately.
