    Air Fryer Crispy Lechon Kawali Recipe

Spicy pork spare ribs.Pork ribs with spices , homemade BBQ sauce and beer cooked in convection oven.

Ingredients

  • 1 cinnamon stick
  • 2 tablespoons coriander seeds
  • 2 teaspoons fennel seeds
  • 2 teaspoons cumin seeds
  • 10 black peppercorns
  • 1/4 cup (60 g) brown sugar
  • 1 tablespoon kosher salt
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground chipotle powder
  • 1 teaspoon dry mustard powder
  • ½ teaspoon cayenne pepper
  • 3 pounds (1.440 kg) pork spare ribs
  • 12 oz (360 ml) beer
  • FOR HOMEMADE BBQ SAUCE:1/2 yellow onion.peeled and minced
  • 4 cloves garlic,peeled and minced
  • 14 oz (420 g) can tomato sauce
  • 1/4 cup (60 g) brown sugar
  • 3 tablespoons apple cider vinegar
  • 2 tablespoon molasses
  • 1 chipotle chili in adobo, chopped
  • 1 teaspoon kosher salt
  • freshly ground black pepper to taste

Method

Step 1

In a small pan.combine cinnamon, coriander, fennel, cumin and peppercorns. Toast over medium heat until fragrant. Grind toasted seeds and combine with remaining ingredients,except pork spare ribs and beer. Rub pork ribs with this mixture,then cover with plastic wrap and refrigerate for 24 hours.

Step 2

Preheat oven to 300 F (150 C). Arrange pork ribs on a baking sheet and pour beer into the bottom of the sheet. Cover baking sheet with aluminum foil (do not touch pork ribs). Bake in preheated oven for 1 hour,then turn the ribs over , replace aluminum foil and bake for a further 1 hour.

Step 3

MAKE HOMEMADE BBQ SAUCE: In a medium pot,combine minced onion and garlic. Cook,stirring,until translucent. Add remaining ingredients. Bring to a boil over medium-high heat. Reduce heat to low and continue simmer for 20 minutes. Season to taste with salt and black pepper. Strain homemade BBQ sauce through a sieve and set aside.

Step 4

Remove aluminum foil from cooked pork ribs, Baste one side of ribs with BBQ sauce and return to the oven. Cook for another 15 minutes. Turn the ribs over,baste with a sauce and bake for additional 15 minutes.

Step 5

Serve spicy pork spare ribs with remaining BBQ sauce.
