- 1 cup (250 ml) pineapple juice
- 1/2 cup brown sugar
- 1/2 cup (125 ml) rice vinegar
- 1/4 cup (60 ml) ketchup
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon cornstarch
- 1Β½ pounds (720 g) boneless pork, cubed
- 2 large eggs, beaten
- 1/4 cup all-purpose flour
- canola oil
- 1 red bell pepper, cored and sliced
- 1 green bell pepper, cored and sliced
- half of yellow onion, peeled and chunked
- cooked rice

Step 1
To make a sauce: In a large mixing bowl, combine pineapple juice, brown sugar, rice vinegar, ketchup, and soy sauce. Whisk well and set aside.
Step 2
In a large pan, heat 3 inches (7.5 cm) of canola oil over medium-high heat. Coat cubed meat in the cornstarch, then dip in beaten eggs and into flour.
Step 3
Drop seasoned pork in the hot oil, one piece at a time. Cook for 2-3 minutes, turning once until cooked through and crispy.
Step 4
Remove cooked pork from the pan and transfer it to a large plate.
