How to Make Traditional Corsican Beef Spaghetti Recipe

Makes 2 servings
Ingredients:1 large yellow onion, 4 tablespoons (60 ml) unsalted butter, 1/2 pound (240 g) ripe tomatoes, 1 garlic clove, 1/2 pound (240 g) minced lean beef, 1 small dried chili, salt and freshly ground black pepper, to taste, 1/2 pound (240 g) uncooked spaghetti, 6 green olives, 1 oz (30 g) cheese

Instructions: Peel and finely chop the yellow onion. Blanch and chop ripe tomatoes, then peel and crush the garlic.

In a medium saucepan, heat the butter over medium heat. Add chopped onion and cook, stirring occasionally, until the onion is lightly browned. Stir in crushed garlic, beef, chili pepper, and tomatoes. Season beef mixture with salt. Reduce heat, cover and simmer the beef mixture for 45 minutes. Remove cooked beef sauce from the heat. Set aside. Discard chili pepper.

Pit green olives and slice. Add to the sauce and stir well. Season with salt.

Meanwhile, cook spaghetti according to cooking instructions, then drain and, stir in remaining butter and allow melting. Transfer cooked spaghetti to serving plates. Pour beef sauce over. Serve hot. Serve the grated cheese separately.

  • 8 oz (240 g) ripe tomatoes, blanched,peeled and chopped
  • 1 garlic clove, peeled and crushed
  • 1/2 pound (240 g) minced beef
  • 1 small dried chili
  • salt & freshly ground black pepper to taste
  • 8 oz (240 g) uncooked spaghetti
  • 6 stoned black olives
  • 1 oz (30 g) cheese

Method

Step 1

Melt half the butter in a saucepan and fry the onion until lightly browned. Peel and crush garlic and add the onions with the minced beef, tomatoes, the dried chili, and salt. Simmer for 45 minutes.

Step 2

Cook the spaghetti in boiling salted water until tender. Drain thoroughly in a colander, then add remaining butter and leave to melt. Remove chili from a sauce.

Step 3

Slice the green olives and add to the sauce. Taste and adjust the seasoning. Pile Corsican spaghetti in a warmed serving dish and pour meat sauce over. Serve the grated cheese separately.
