Zucchini hummus.Very easy and tasty dip.
- 3 cups cubed zucchini
- 1/2 cup Italian flat-leaf parsley leaves
- 1/4 cup tahini
- 1/4 cup (60 ml) extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 2 teaspoons ground cumin
- 1 clove garlic,peeled
- 1 teaspoon salt
- pinch cayenne pepper
- 1 tablespoon toasted sesame seeds
In food processor,combine all ingredients,except toasted sesame seeds. Process until smooth.
Add sesame seeds and blend again. Transfer zucchini humus to to serving bowl and sprinkle with paprika,if desired.
