- 2 cooked baked potatoes, halved
- 2 tablespoons sour cream
- 1/2 cup shredded Cheddar cheese
- 1 tablespoon unsalted butter
- 2 slices bacon, cooked
- chopped green onions, for serving
Scoop out the insides of potatoes. Transfer to a bowl.
Add sour cream, 1/4 cup shredded cheese, and butter to the bowl with scooped potatoes. Using a potato masher, mash ingredients well. Spoon the mixture back to the potato shells.
Preheat your air fryer to 400 F (200 C) for 5 minutes. Place stuffed potatoes in the air fryer basket. Air fry in the preheated fryer at 400 F (200 C) for 8 minutes.
Open the fryer and add remaining cheese and bacon. Bake for a further 2 minutes.
Remove baked potatoes from the fryer and transfer to a serving plate. Sprinkle with chopped green onions. Serve hot.
