- salt and freshly ground black pepper, to taste
- 1 tablespoon Dijon mustard
- 4 slices Swiss cheese
- 4 slices ham
- all-purpose flour
- 1 large egg beaten
- 1 cup Panko breadcrumbs
- 1/3 cup grated Parmesan cheese
Cut along the side of each chicken breast and slice it with a knife, keeping the other side of the breast attached. Open a breast (at the end, you might want to fold it in half). Place the open breast flat on your surface and wrap the exposed portion in plastic wrap. Using a felt side of the mallet, lightly pound the chicken.
