Ingredients

  • 17½ oz (525 g) ricotta cheese
  • 5 oz (150 g) sugar
  • 3 large eggs, beaten
  • 3 tablespoons all-purpose flour
  • 1 lemon, juiced and zested
  • 2 teaspoons vanilla extract

Method

Step 1

In a large mixing bowl, combine all ingredients. Beat until a creamy consistency.

Step 2

Transfer the batter to a baking pan and place in the air fryer.

Step 3

Bake at 320 F (160 C) for 25 minutes, or until a toothpick inserted in the center of the cake comes out clean.

Step 4

Remove ricotta cheesecake from the fryer. Allow to cool for 10 minutes on a wire rack. Slice and serve.
