Ingredients

  • 1 ½ pounds (760 g)pork tenderloin
  • 1/2 taspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon Dijon mustard
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon Italian seasoning
  • To Make Apricot Sauce:
  • 12 oz (360 ml) apricot preserves
  • 2 tablespoons dry sherry
  • 1 tablespoon soy sauce

Method

Step 1

Preheat your air fryer to 400 F (200 C) for 5 minutes.
