Baked Blueberry Banana Bread

Ingredients

  • 2 cups (500 g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup (250 g) granulated sugar
  • 3 tablespoons vegetable oil
  • 2 large ripe bananas, peeled and mashed
  • 1 large egg, beaten
  • 1 teaspoon vanilla
  • 1 1/3 cups (330g) fresh blueberries

Method

Step 1

Heat your oven to 350 F (175 C). Grease it with nonstick cooking spray and flour a 9×5-inch loaf pan.

Step 2

In a mixing bowl, combine all-purpose flour, salt, and baking powder. Stir well and set it aside.

Step 3

In a large mixing bowl, combine sugar, vegetable oil, beaten egg, vanilla, and mashed bananas. Mix until smooth. Add in the dry mixture and stir until just combined.

Step 4

Using a spatula, fold in fresh blueberries. Pour the batter into greased loaf pan.

Step 5

Bake in preheated oven for 50-60 minutes or until a toothpick inserted into the center of the loaf comes out clean.

Step 6

Allow baked blueberry banana bread to cool in the pan for 10 minutes. Turn it out onto a wire rack to cool it completely before slicing.
