Baked blueberry banana bread. Very delicious and healthy breakfast.You can use it also as a dessert.
- 2 cups (500 g) all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup (250 g) granulated sugar
- 3 tablespoons vegetable oil
- 2 large ripe bananas,peeled and mashed
- 1 large egg,beaten
- 1 teaspoon vanilla
- 1 1/3 cups (330g) fresh blueberries
Heat your oven to 350 F (175 C). Grease with nonstick cooking spray and flour a 9×5-inch loaf pan.
In a mixing bowl,combine all-purpose flour,salt and baking powder. Stir well and set aside.
In a large mixing bowl,combine sugar,vegetable oil,beaten egg,vanilla and mashed bananas. Mix until smooth. Add in dry mixture and stir until just combined.
Using a spatula,fold in fresh blueberries. Pour batter into greased loaf pan.
Bake in preheated oven for 50-60 minutes or until a toothpick inserted into the center of the loaf comes out clean.
Allow baked blueberry banana bread to cool in pan for 10 minutes. Turn it out onto a wire rack to cool completely before slicing.
