Baked prosciutto-wrapped cod.Cod fillets with prosciutto and cherry tomatoes baked in the oven.Delicious!
- 14 oz (420 g) cod fillets,skinless,boneless and cut into 4 pieces
- 8 slices Italian prosciutto
- olive oil
- salt and freshly ground black pepper,to taste
Preheat oven to 425 F (210 C).
Pat fish fillets dry with paper towel. Season with salt and black pepper. Place seasoned fish fillets in a baling sheet. Sprinkle with olive oil. Wrap 2 slices of prosciutto around fish.
Place cherry tomatoes in a baking sheet next to the fish. Drizzle tomatoes and fish with olive oil and season with salt and black pepper.
Bake in preheated oven for 35 minutes until the tomatoes are lightly colored and cod is cooked through. Serve baked prosciutto-wrapped cod with roasted tomatoes.
