Oven grilled cod with bacon. Cod fillets with bacon grilled in an oven. Very easy and simple fish recipe.

Ingredients

  • 2 cod fillets
  • 2 tablespoons vegetable oil
  • 2 oz (60 g) thin striped bacon rashers
  • 1 oz (30 g) butter
  • 1 tablespoon freshly squeezed lemon juice
  • sprigs of parsley
  • lemon wedges
  • salt and freshly ground black pepper

Method

Step 1

Preheat the grill.

Step 2

Lightly brush fish with oil. Season with salt and black pepper.

Step 3

Place under hot grill and cook for 12-15 minutes, turning once. Remove rind from the bacon and fry it, using a nonstick frying pan. Drain fried bacon on towel paper.

Step 4

Using a small saucepan, melt a butter. Arrange oven grilled cod and cooked bacon on a warmed serving plate. Pour melted butter over and sprinkle with freshly squeezed lemon juice. Garnish oven grilled cod with parsley sprigs and lemon wedges.
