- 2 cod fillets
- 2 tablespoons vegetable oil
- 2 oz (60 g) thin striped bacon rashers
- 1 oz (30 g) butter
- 1 tablespoon freshly squeezed lemon juice
- sprigs of parsley
- lemon wedges
- salt and freshly ground black pepper
Preheat the grill.
Lightly brush fish with oil. Season with salt and black pepper.
Place under hot grill and cook for 12-15 minutes,turning once. Remove rind from the bacon and fry it,using nonstick frying pan. Drain fried bacon on towel paper.
Using a small saucepan,melt a butter. Arrange oven grilled cod and cooked bacon on warmed serving plate. Pour melted butter over and sprinkle with freshly squeezed lemon juice. Garnish oven grilled cod with parsley sprigs and lemon wedges.
