Oven Baked Pepper Steak Recipe
Boneless rib beef steak with mushrooms, cognac, and herbs cooked in the oven.
Makes 4 servings
Ingredients: 4 boneless rib steaks, 1/4 cup (50 ml) black peppercorns, crushed, 1½ tablespoons (25 ml) vegetable oil, 1 tablespoon (15 ml) unsalted butter, 1 pound (480 g) sliced mushrooms, 1 shallot, chopped, 1 tablespoon (15 ml) chopped fresh parsley, 2 tablespoons (30 ml) cognac, 1 cup (25 ml) heavy cream, salt and freshly ground black pepper
Instructions: Preheat the oven to 150º F (75º C). Cover both sides of the steaks with crushed peppercorns. Press pepper into the meat. Working in batches, cook steaks following this procedure: Heat half of the vegetable oil in a large frying pan. When hot, add seasoned steaks and cook for 3-4 minutes over high heat.
Turn steaks over, then season with salt and continue cooking for further 3-4 minutes. Remove cooked meat from the pan and keep steaks hot in the oven. Add butter, mushrooms, shallot, and parsley to the pan. reduce heat to medium and cook for additional 3-4 minutes. Season with salt and black pepper. Pour in the cognac and cook for a further 1 minute.
Stir in heavy cream and season well. Cook for 3-5 minutes over medium-high heat. Remove meat from the oven and pour any juices into the sauce. Replace steaks in the oven. Stir the sauce and cook for additional 2 minutes. Pour sauce over cooked steaks. Serve immediately.

Ingredients
- 2 ½ tablespoons vegetable oil
- 1 medium yellow onion, peeled and finely chopped
- 2 pounds (960 g) lean ground beef
- 1 large egg, beaten
- 2 yellow onions, peeled and thinly sliced
- 1 tablespoon unsalted butter
- 1½ cups (375 ml) warm brown sauce
- pinch of sweet basil
- dash ground cloves
- few crushed chilies
- salt and freshly ground black pepper
Method
Step 1
Preheat the oven to 150 F (75 C). Heat 1 tablespoon vegetable oil in a small frying pan. Add chopped onion and spices. Cover pan and cook over low heat, stirring occasionally, for about 4 minutes.
Step 2
Place beef in a large bowl and press down the center. Add beaten egg and mix well with hands. Add cooked onion mixture and mix until well incorporated. Add seasoning to taste.
Step 3
Shape mixture into patties. Score with knife.
Step 4
Heat remaining vegetable oil in the large frying pan. Add meat and cook for 10-12 minutes over medium heat, turning 3-4 times during cooking. Once meat seared, season well.
Step 5
Transfer beef to ovenproof platter. Keep hot in the oven.
Step 6
Add sliced onions and butter to frying pan. Cook over medium heat, stirring occasionally, for 6-7 minutes. Pour in brown sauce and season generously. Mix well and continue cooking for further 3 minutes.
