Cheese and pepperoni stuffed chicken.Mozzarella,pepperoni and egg stuffed chicken breasts.Delicious!!!
- 1 pound(480 g) chicken breasts,skinless and boneless
- 1 large egg
- 1²⁄³ oz(50 g) Mozzarella cheese,sliced
- 1 oz(30 g) pepperoni,sliced
- 1/2 cup(125 g) all-purpose flour
- 1/2 cup(125 g) bread crumbs,finely chopped
- 6 tablespoons vegetable oil
- salt and freshly ground black pepper,to taste
Using a sharp knife,cut each chicken into halves,diagonally.
Using a thin-bladed knife,make a pocket in chicken halves to hold a stuffing.
Open up the breasts and place cheese and pepperoni in the center. Season to taste with salt and black pepper. Close the breast over the filling, pressing the edges firmly together to seal. Repeat with the remaining chicken breasts and filling.
Preheat the oven to 360ºF(180ºC). Line baking dish with aluminum foil.
In a small mixing bowl,whisk egg until fluffy. Set aside.
Place all-purpose flour in another small bowl. Set aside.
Place breadcrumbs in a shallow glass dish.
Hold each chicken breast half together and dip in flour, beaten egg, then dredge in breadcrumbs.
Preheat vegetable oil in a large nonstick skillet over medium-high heat. Add stuffed chicken breasts and cook until browned on one side, about 2 minutes.
Place the chicken, browned-side up, on the prepared baking sheet. Bake until tender for about 20-25 minutes.
