Chinese spare ribs.Fried pork ribs served with tasty homemade hoisin and soy sauce.
- 1½ pounds(720 g) pork spare ribs
- 2 tablespoons olive oil
- 1 tablespoon Hoisin sauce
- 1 tablespoon soy sauce
- For Sauce:
- 1/2-inch (1.2 cm) piece of root ginger,shredded
- 2 green pepper,deseeded and cut into thin strips
- 2 tablespoons garlic cloves,peeled and crushed
- 1 tablespoon olive oil
- 2 tablespoons soy sauce
- 2 tablespoons dry sherry
- 2 tablespoons tomato puree
- 2 tablespoons vinegar
- 1 tablespoon white sugar
- 4 tablespoons cornflour
- 3 tablespoons pineapple juice
Separate the pork into ribs. Cook in boiling water for 15 minutes. Drain and dry on kitchen paper.
Preheat olive oil in large frying pan. Add ribs and stir in hoisin and soy sauce. Cook gently for 20 minutes.
Prepare Sauce: Preheat oil in saucepan. Add crushed garlic,ginger and green pepper and stir-fry for 2 minutes. Remove from heat and stir in soy sauce,dry sherry,tomato puree,vinegar and sugar.
In mixing bowl,combine cornflour,pineapple juice and water. Mix well and add to the saucepan.
Bring mixture to the boil and cook for 2 minutes,stirring constantly. Place Chinese spare ribs in a warming serving plate. Pour sauce over. Serve immediately with boiled rice.
