Crock Pot Thai Curry Beef Recipe

Ingredients
- 27 oz (810 ml) coconut milk
- 6 tablespoons fish sauce
- 1/4 cup (60 ml) Thai curry paste
- 1/4 cup brown sugar
- 2 pounds (960 g) stewing beef
- 8 cups frozen bell peppers and carrots
- 2 tablespoons freshly squeezeed lime juice
- cooked rice
- chopped fresh cilantro
- lime wedges
- toasted peanuts, sliced
Method
Step 1
In a 6-quart (6 L) crock pot, combine coconut milk, fish sauce, Thai curry paste, and brown sugar. Stir well. Add stewing meat and toss well to coat.
Step 2
Close the pot and cook on low-heat setting for 6 hours.
Step 3
Open the lid and stir in frozen vegetables. Recover it and cook for a further 2 hours.
Step 4
Turn off the cooker and open the lid. Stir in lime juice. Serve over the cooked rice, garnished with chopped fresh cilantro, lime wedges, and chopped peanuts.
