Serve as a sauce on chicken or fish. To make a tomato dressing for cold pasta, add 1/2 cup (125 ml) of extra virgin olive oil to the tomato, basil, and garlic sauce-it yields enough for 1 pound (480 g) of cooked pasta.
Ingredients: 1 recipe Basic Tomato Sauce (recipe follows), 2 tablespoons (30 ml) coarsely chopped basil leaves, 1/2 teaspoon finely chopped garlic
Instructions: Stir chopped basil and garlic into the finished basic tomato sauce. Enjoy!
Tomato, Rosemary, Caper, and Balsamic Vinegar Sauce Recipe

Easy Basic Tomato Sauce Recipe
Ingredients
- 1/2 cup filnelly chopped yellow onion
- 1/4 cup (60 ml) extra virgin olive oil
- 28 oz (840 ml) can Italian plum tomatoes, drained
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Method
Step 1
In a heavy saucepan, saute the onions in the oil over medium heat until soft and translucent. Add drained tomatoes, breaking them up with a spoon.
Step 2
Bring to a boil, then reduce heat to low, and cook at a gentle simmer, for 20-30 minutes, or until slightly thicknened.
Step 3
Pass the sauce through a food mill fitted with fine disk, or through a sieve. Season with salt and black pepper.
