Easy blackcurrant sauce recipe. Very easy, three ingredients sauce. Use for all kinds of meat, especially boiled. This sauce can be made and stored in the refrigerator for future use. Allow 1/2 cup (125 ml) of sweet sauce per person, as they are rich and concentrated in flavor.

Zabaglione Sauce Recipe
Instructions: Beat the egg yolks with the sugar on top of a double boiler until foaming and pale. Place over gently boiling water and slowly add the Marsala wine and brandy, beating continuously until the mixture thickens and becomes foamy. Do not overcook.
Remove from the heat, pour into glasses, and serve immediately with ladyfingers or cream wafers. This sauce may also be served with a hot fruit pudding.
Variations: Strawberry Sabayon is Zabaglione with fresh strawberries added just before serving. Sabayon is a French corruption of the Italian Zabaglione.
Chocolate Sauce Recipe:
Ingredients: 2 squares unsweetened cooking chocolate, 2/3 cup (160 ml) water, 1 cup sugar, 2 tablespoons cornstarch, 1/4 cup unsalted butter, 1/4 cup brandy or rum
Instructions: Roughly chop the chocolate and add to the simmering water. Heat gently until the chocolate melts and the mixture is smooth. Add the sugar, then the cornstarch, previously mixed to a smooth paste with 1/2 cup (125 ml) cold water. Bring to a boil, stirring continuously until the sugar is dissolved and the sauce has thickened. Simmer for 3 minutes, then stir in the butter, and the brandy or rum if desired.
Strawberry or Raspberry Sauce Recipe
This delicious sauce may be made of either fruit or a mixture of both.
Ingredients: 1/2 cup fresh strawberry or raspberry juice, 2 tablespoons red currant jelly, 1 teaspoon cornstarch
Instructions: Place the juice in a saucepan, reserving 2 tablespoons, add the warmed red currant jelly, and bring to a boil over medium-high heat. Blend the cornstarch to a paste with the reserved juice. Pour the hot juice onto the blended mixture, stirring continuously with a wooden spoon. Return to the saucepan and boil, stirring, until the sauce is clear and thickened.
Vanilla Custard Sauce Recipe
Ingredients: 1¼ cups (310 ml) milk, 1/2 teaspoon vanilla extract, 6 tablespoons sugar, 3 egg yolks
Instructions: Heat the milk gently to body temperature over low heat. Stir in vanilla extract. Blend the sugar and egg yolks in a mixing bowl, mixing until smooth. Add a little of the warmed milk, stirring constantly, then add the remaining milk. Return to low heat and cook, stirring, until the mixture thickens and has the consistency of cream. Serve warm with ice cream, baked and steamed pudding, or fruit puddings.

- 1 garlic clove, peeled
- 1 bunch fresh parsley
