Skillet fried marinated shrimp served with tasty homemade mint sauce. Yummy!
To cook prawns, add raw prawns, shelled or unshelled, to boiling, salted water to cover. Return water to boiling over medium-high heat, then reduce heat to low and simmer for 1-3 minutes, depending on size, until the shrimp is reddish on the outside and opaque inside, with curled-up tails.

Classic English Mint Sauce Recipe
Makes 1/2 cup (125 ml)
Ingredients: 2 teaspoons caster (superfine) sugar, 2 cups fresh mint leaves, finely chopped, 1/3 cup (80 ml) white wine vinegar
Instructions: In a medium bowl, combine caster sugar and 1 tablespoon of boiling water. Stir until sugar dissolves completely. Add remaining ingredients and stir well. Serve over Jumbo Prawn Cocktail or roast lamb.

Prawn Cocktail with Tangy Dip Recipe
Makes 6 servings
Ingredients: 4 cups (2 l) water, 1 teaspoon salt, 1 pound (480 g) shelled and deveined prawns, 1/3 cup (80 ml) chili sauce, 1/3 cup (80 ml) ketchup, 2 teaspoons homemade horseradish, 1ยฝ teaspoons freshly squeezed lemon juice, 6 fresh lettuce leaves, lemon twists for garnish
Instructions: In a 3-quart (3 l) saucepan, bring salted water to a boil. Add prawns, then reduce heat to low and simmer until they turn pink, for about 3-5 minutes. Turn off the heat. Using a colander, drain cooked prawns, then transfer to a large glass bowl, set aside and allow cooling completely. Cover the bowl and refrigerate.
In a small mixing bowl, combine chili sauce, ketchup, horseradish, and lemon juice. Mix well. Wrap with plastic wrap and refrigerate.
Just before serving: On plates, on fresh lettuce leaves, arrange cooked prawns, spoon cocktail sauce, and serve with lemon twists. Enjoy!

Ingredients
- 24 raw shrimp, cut lengthwise into 2 halves
- 5 oz (150 ml) yogurt
- 3 tablespoons Indian curry paste
- 4 sprigs of mint, rinsed, divided into leaves
- 1 cucumber cut into small pieces
- salt
Method
Step 1
In a large mixing bowl, combine yogurt with curry paste. Mix well and set aside.
Step 2
Place shrimp cut up on a large platter. Brush with curry mixture and refrigerate for 4-5 hours.
Step 3
Fry the shrimp on the grill for 2 minutes on each side. Serve with mint sauce.
Step 4
To make Mint Sauce: Mash mint leaves with the pestle until the juice is. In a small bowl, combine mint, cucumber, and yogurt. Mix well and set aside.
