Fried honey chicken.Marinated chicken fried in skillet.
- 1 pound (480 g) boneless,skinless chicken breasts,cubed into 1-inch(2.5 cm) cubes
- cooking oil,for frying
- 2 teaspoons cornstarch
- 4 teaspoons water
- toasted sesame seeds,to garnish
- For Marinade:
- 1/2 teaspoon salt
- 3 dashes freshly ground white pepper
- For Frying Butter:
- 1 egg white
- 1/2 cup all purpose flour,sifted
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- 1/2 cup (125 ml) water
- 1 tablespoon peanut oil
- 1/4 teaspoon salt
- For Honey Garlic Sauce:
- 2 cloves garlic peeled and sliced
- 1/3 cup (80 ml) clear honey
- 1 teaspoon salt
- 1 teaspoon dry sherry wine
- 1 teaspoon apple cider vinegar
- 1/2 cup water
In a small mixing bowl,combine cornstarch and 4 teaspoons water. Mix well and set aside.
Using another mixing bowl,combine 1/2 teaspoon salt and ground white pepper. Mix well,add cubed chicken and allow to marinate for 5 minutes.
In a large mixing bowl,lightly whisk egg white,add remaining frying butter ingredients. Mix well until smooth.
Place another bowl with ice cubes underneath the frying batter bowl. Drop in marinated chicken cubes,mix well until well coated. Refrigerate for 30 minutes-1 hour.
Honey Garlic Sauce: Using another mixing bowl,combine garlic,honey,wine,vinegar and water. Mix well and set aside.
Frying: Preheat cooking oil in a dip wok.
Carefully drop in buttered chicken cubes,one by one,turn heat to medium-high. Fry chicken until golden brown.
Remove cooked chicken from the heat,reserving 3 tablespoons of cooking oil. Pat dry on paper towels.
Add garlic to reserved oil and stir-fry until browned and oil is fragrant. Using a slotted spoon,remove garlic from the oil,reserving 2-3 tablespoons of garlic oil in the wok.
Preheat reserved garlic oil over medium-high heat. Gently pour in the garlic-honey sauce and simmer for a few minutes.
Add cornstarch mixture to thicken the sauce,stir in salt,sugar and water to taste. Pour sauce over cooked chicken cubes,making sure the chicken is well coated. Mix well and sprinkle with toasted sesame seeds.
Serve fried honey chicken immediately.
