Ingredients
- 2 tablespoons cooking oil
- 3 tablespoons minced garlic
- 1/2 yellow onion, peeled and chopped
- 2 cups (500 ml) water
- 5 tablespoons tomato sauce
- 2 tablespoons fish sauce
- 1/4 teaspoon chili flakes
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3 bay leaves
- 2 pounds (960 g) beef brisket, cubed
- 1 large yellow potato, peeled and cubed
- 2 carrots, peeled and sliced
- 1 red bell pepper, cored and sliced
Method
Step 1
Heat the cooking oil in an electric instant pot turned to saute mode. Add garlic and onion. Saute, stirring occasionally, until the onion is translucent.
Step 2
Pour 2 cups (500 ml) water into the cooker, then add tomato sauce, fish sauce, chili flakes, salt, black pepper, and bay leaves. Mix well. Stir in cubed beef.
Step 3
Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 35 minutes.
Step 4
Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Stir in the vegetables. Lock the lid again, press Manual, and cook for a further 1 minute.
Step 5
Open the lid and stir the beef stew well before serving. Ladle it into large bowls. Serve hot.
