Ingredients
- 3 pounds (1.44 kg) beef roast
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 2 cloves garlic, peeled
- 1 tablespoon unsalted butter
- 2 tablespoons Worcestershire sauce
- 1 cup chopped yellow onion
- 1 cup sliced mushrooms
- 1 cup (250 ml) beef stock
- 2 tablespoons olive oil
Method
Step 1
Heat one tablespoon olive oil in an electric instant pot turned to saute mode. Add the mushrooms, garlic, and onions. Cook until golden brown. Remove cooked vegetables from the cooker and set aside.
Step 2
Add the remaining oil to the instant pot. Season the beef with salt and pepper on both sides. Place to hot oil and saute until browned on both sides.
Step 3
Add the butter. When butter is melted, pour in the beef broth and Worcestershire sauce. Stir well. Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 45 minutes.
Step 4
Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Add reserved vegetables back to the cooker. Close the pot and lock the lid again. Set the machine to cook at high pressure. Set the timer to cook for 1 minute.
Step 5
Using the Quick Release method, bring pressure to normal. Unlock and open the lid. Serve hot.
