Mini rolls with smoked salmon.Delicious pancake rolls with cottage cheese and smoked salmon.

Ingredients

  • For the Batter:
  • 1 oz(30 ml) milk
  • 1/2 cup(125 g) all-purpose flour
  • 2 large eggs,beaten
  • pinch of salt
  • For the Filling:
  • 7 oz(210 g) cottage cheese
  • 1 cup(250 g) heavy cream
  • 1 tablespoon chopped dill
  • 1 pound(480 g) smoked salmon,sliced
  • salt and freshly ground black pepper to taste
  • freshly squeezed lemon juice

Method

Step 1

In a mixing bowl,combine milk,flour,eggs and salt. Mix well and set aside for 30 minutes.

Step 2

In a nonstick skillet,preheat knob of butter. Cook pancakes for a few minutes.

Step 3

In another mixing bowl,combine cottage cheese ,heavy cream and chopped dill. Season with salt and black pepper and mix well.

Step 4

Spread each pancake with cheese mixture and top with slice with smoked salmon. Sprinkle with lemon juice.

Step 5

Roll each pancake and slice into 1½-2 inches(3-5 cm) pieces. Secure with a toothpicks.

Step 6

Arrange on a serving dish and refrigerate until ready to serve.
