Mini Rolls with Smoked Salmon
- For the Batter:
- 1 oz(30 ml) milk
- 1/2 cup(125 g) all-purpose flour
- 2 large eggs, beaten
- pinch of salt
- For the Filling:
- 7 oz(210 g) cottage cheese
- 1 cup(250 g) heavy cream
- 1 tablespoon chopped dill
- 1 pound(480 g) smoked salmon, sliced
- salt and freshly ground black pepper to taste
- freshly squeezed lemon juice
In a mixing bowl, combine milk, flour, eggs, and salt. Mix well and set aside for 30 minutes.
In a nonstick skillet, preheat knob of butter. Cook pancakes for a few minutes.
In another mixing bowl, combine cottage cheese, heavy cream, and chopped dill. Season with salt and black pepper and mix well.
Spread each pancake with cheese mixture and top with slice with smoked salmon. Sprinkle with lemon juice.
Roll each pancake and slice into 1½-2 inches (3-5 cm) pieces. Secure with toothpicks.
Arrange on a serving dish and refrigerate until ready to serve.
