Easy Chicken Curry Recipe
Serves 4-6
Ingredients: 2 yellow onions, peeled and finely chopped, 2 cloves garlic, peeled and crushed 1-inch (2.5 cm) piece ginger, grated, 1/4 cup ghee, 1/4 cup curry powder, 2 large ripe tomatoes, skinned, seeded and diced, 2 teaspoons paprika pepper, 2 cloves, 3-inch (7.5 cm) cinnamon stick, 2 cups (500 ml) coconut milk, 2 teaspoons salt, 2 fresh chili peppers, 1 stewing chicken, cut into serving pieces, 1/4 cup (60 ml) sour cream, 2 tablespoons chopped fresh mint
Instructions: In a saucepan, heat ghee over medium-high heat. Add onions, garlic, and ginger. Cook, stirring, in hot ghee until beginning to turn golden. Add the curry powder and cook for 3-4 minutes. Stir in diced tomatoes, paprika, cloves, cinnamon, coconut milk, salt, and seeded chili peppers. Cover saucepan, reduce heat to low and simmer for about 15 minutes. Add chicken pieces and continue to simmer for a further 45 minutes to 1 hour, or until chicken pieces are tender. Discard the chili peppers. Stir in sour cream and chopped mint. Heat through and serve with accompaniments.

Step 1
Rub chicken breasts with salt and black pepper. Stuff curry powder under the skin of chicken breasts.
Step 2
Arrange curried chicken breasts on the high rack of turbo oven. Cook at 400°F(205°C) for 20-25 minutes.
