This recipe belongs to Fine Indian Cuisine. India is a vast country and its food varies from region to region. It is a common mistake to think that all Indian food is hot. Spicy, yes, but not always hot.In fact, there are many curries in which chili powder or pepper (the only hot ingredients) do not feature at all.

However, the subtle spicing of curries is a peculiarly Eastern art and there are not too many people, regardless of their nationality, who do not appreciate a really good curry. A curry meal is exotic and yet very simple to prepare. Rice, either plain boiled or cooked with spices is always served with the curries. An important part of the meal is the selection of accompaniments or sambals. A most suitable dessert would be a well-chilled salad of fresh fruit.

In this topic, I preparing tasty oven baked easy chicken curry recipe in halogen (turbo) oven without adding any oil. Only chicken thighs, curry powder, and seasoning. You can also prepare the similar recipe in a saucepan if desired.

Easy Chicken Curry Recipe

Serves 4-6

Ingredients: 2 yellow onions, peeled and finely chopped, 2 cloves garlic, peeled and crushed 1-inch (2.5 cm) piece ginger, grated, 1/4 cup ghee, 1/4 cup curry powder, 2 large ripe tomatoes, skinned, seeded and diced, 2 teaspoons paprika pepper, 2 cloves, 3-inch (7.5 cm) cinnamon stick, 2 cups (500 ml) coconut milk, 2 teaspoons salt, 2 fresh chili peppers, 1 stewing chicken, cut into serving pieces, 1/4 cup (60 ml) sour cream, 2 tablespoons chopped fresh mint

Instructions: In a saucepan, heat ghee over medium-high heat. Add onions, garlic, and ginger. Cook, stirring, in hot ghee until beginning to turn golden. Add the curry powder and cook for 3-4 minutes. Stir in diced tomatoes, paprika, cloves, cinnamon, coconut milk, salt, and seeded chili peppers. Cover saucepan, reduce heat to low and simmer for about 15 minutes. Add chicken pieces and continue to simmer for a further 45 minutes to 1 hour, or until chicken pieces are tender. Discard the chili peppers. Stir in sour cream and chopped mint. Heat through and serve with accompaniments.

Oven Baked Easy Chicken Curry Recipe


  • 4 chicken breasts ot thighs
  • curry powder
  • salt and freshly ground black pepper


Step 1

Rub chicken breasts with salt and black pepper. Stuff curry powder under the skin of chicken breasts.

Step 2

Arrange curried chicken breasts on the high rack of turbo oven. Cook at 400°F(205°C) for 20-25 minutes.
