Oven Baked Fish in White Wine

Ingredients
- 4 white fish fillets
- 5 tablespoons unsalted butter
- 4 green onions, chopped
- 3/4 cup (180 ml) dry white wine
- 2 tablespoons fresh herbs (such us tarragon and parsley)
- freshly squeezed lemon juice
- chopped fresh parsley for garnish
Method
Step 1
Preheat oven to 350 F (175 C).
Step 2
Wash white fish fillets and pat dry with paper towels. Season with salt and black pepper.
Step 3
Melt 1 tablespoon butter in ovenproof stainless steel dish. Add half the chopped green onion in the dish. Lay seasoned white fish fillets in the dish overlapping somewhat. Top with the remaining green onions. Sprinkle with chopped fresh herbs.
Step 4
Add the dry white wine beside the fish fillets. Place on the stove and simmer over low heat.
Step 5
Meanwhile, melt 2 tablespoons unsalted butter and drizzle over fish. Cover the dish and transfer to the preheated oven. Cook in preheated oven for 7-10 minutes.
Step 6
Pour off all the liquid into a sauce pan. Return the fish fillets back in the oven with the door ajar. Turn off the oven. Very quickly, over high heat reduce the liquid until almost syrupy.
Step 7
In a mixing bowl, combine lemon juice and fresh minced parsley. Whisk well. Add remaining butter and stir well. Pour mixture over the cooked fish fillets. Serve immediately.
