Pancetta-Wrapped Scallops Appetizer Recipe

Ingredients

  • sea scallops, cut into halves,if necessary
  • pancetta thinly sliced, about 1/2 slice per scallop
  • freshly squeezed lemon juice
  • finely chopped chives

Method

Step 1

Preheat barbecue to 425°F (220°C).

Step 2

Wrap scallops in pancetta and spear crosswise with soaked wooden skewers. (white top of the scallop is facing up).

Step 3

Grill, turning once, until pancetta begins to crisp and scallop is just firm and opaque (about 5 minutes).

Step 4

Remove pancetta-wrapped scallops from the grill. Drizzle with freshly squeezed lemon juice and sprinkle with chopped chives.

Step 5

Serve hot.
