Chicken Drumsticks with Cherry Tomatoes and Basil in Pressure Cooker

Makes 4-6 servings

Ingredients: 2 tablespoons olive oil, 3 pounds (1.44 kg) skin-on chicken drumsticks, 1/2 teaspoon salt, 1/2 teaspoon freshly ground black pepper, 12 small cherry tomatoes, halved, 1 teaspoon minced garlic, 1 medium fresh jalapeño pepper, stemmed, seeded, and minced, 1/4 cup (60 ml) chicken broth, 1/4 cup fresh basil leaves, minced

Instructions: In a 6-quart (6 L) pressure cooker, heat olive oil over medium heat. Season chicken drumsticks with salt and black pepper. Working in batches, brown well chicken legs, turning occasionally, for about 5 minutes. Transfer browned chicken to a large bowl and keep warm.

Add tomatoes, garlic, and jalapeño to the pressure cooker. Cook, stirring, for a further 1 minute, or until the tomatoes soften without breaking down. Pour in chicken broth and stir in minced fresh basil. Stir well. Scrape up any browned bits on the bottom of the pot. Place warmed drumsticks with any accumulated juices into the sauce.

Close the pressure cooker and lock the lid. Set burner heat to high pressure. When the cooker reaches high pressure, reduce heat to low. Set a timer to cook for 15 minutes.

Open the pressure cooker, using a Quick Release Method. Transfer baked chicken drumsticks to a serving bowl. Stir well the sauce and pour over the chicken.

Makes 4-6 servings

Ingredients:1/4 cup (60 ml) chicken stock, 3 tablespoons minced garlic, 3 tablespoons brown sugar, 3 tablespoons soy sauce, 2 tablespoons rice vinegar, 1 tablespoon minced fresh ginger, 1 tablespoon sambal oelek, 2 tablespoons peanut oil, 3 pounds (1.44 kg) skin-on chicken drumsticks

Instructions: In a large blender, combine all ingredients, except peanut oil and chicken drumsticks. Blend until smooth, stopping the blender once to scrape down the inside of the canister. In a 6-quart (6 L) pressure cooker, heat peanut oil over medium heat. Working in batches, add chicken drumsticks and brown well, turning occasionally, for about 5 minutes, transferring the first batch to a large bowl.

Return cooked chicken drumsticks to the pressure cooker. Pour blended mixture over and toss well to coat. Close the pressure cooker and lock the lid. Set burner heat to high pressure. When the cooker reaches high pressure, reduce heat to low. Set a timer to cook for 15 minutes.

Unlock and open the pressure cooker, using a Quick Release method. Using tongs, transfer cooked drumsticks to a serving platter. Bring the remaining sauce to a boil over medium-high heat. Cook, stirring, until the sauce in the pot has reduced to 1/4 cup (60 ml), for about 6 minutes.

Ingredients

  • 1/2 cup (125 ml) chicken broth
  • 2 tablespoons clear honey
  • 1 tablespoon mollasses
  • 1 tablespoon brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon white wine vinegar
  • 2 tablespoons unsalted butter
  • 3 pounds (1.44 kg) skin-on chicken drumsticks
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Method

Step 1

In a large mixing bowl, combine all ingredients, except butter and chicken drumsticks. Whisk until molasses and brown sugar dissolve and set aside.

Step 2

Melt the butter in a 6-quart (6 L) pressure cooker turned to the sauté mode Season chicken with salt and black pepper. Working in batches, brown seasoned chicken drumsticks, turning occasionally, for about 5 minutes, transferring the first batch to a serving platter.

Step 3

Return all cooked drumsticks to the pressure cooker. Pour the broth mixture over. Toss well to coat.

Step 4

Close the pot and lock the lid. Set the machine to cook at high pressure. Set a timer to cook for 18 minutes.

Step 5

Unlock the pressure cooker and open it, using a Quick Release method. Using tongs, transfer chicken drumsticks to a serving platter.

Step 6

Switch the setting to the sauté mode and bring the remaining sauce to a simmer. Cook, stirring, until the liquid in the pot has reduced to a syrupy glaze, for 1-3 minutes. Pour glazed sauce over chicken drumsticks. Serve hot.
