Pressure cooker beef fajitas recipe. Beef round steak with spices and sweet bell pepper cooked in a pressure cooker and served in warm tortillas. Juicy, tender, and flavorful.

I already cooked chicken fajitas in a pressure cooker and beef sirloin steak in a slow cooker. Now it is time to prepare beef fajitas in an electric pressure cooker. (the short version of this recipe follows)

So, how to cook Mexican beef fajitas in the pressure cooker? This is very easy! First, you need to use the following ingredients: 2 pounds (0.91 kg) boneless beef round steak, 1 tablespoon (15 ml) chili powder, 1 teaspoon (5 ml) ground cumin, 1/4 teaspoon (1 ml) red pepper flakes, 1 teaspoon (5 ml) paprika, 1 teaspoon salt, ½ teaspoon (3 ml) freshly ground black pepper, 1 medium yellow onion, 2 cloves garlic, 2 tablespoons (30 ml) vegetable oil, ½ cup(125 ml) beef broth, 1 large red bell pepper, warmed tortillas and fajita toppings of your choice

Instructions: Cut the beef round steak into strips, then set aside. Peel the yellow onion and thinly slice. Peel and mince garlic cloves. Core, seed, and slice the red bell pepper. In a large bowl, combine beef strips, spices, sliced onion, and garlic. Toss well.

Heat the vegetable oil in an electric pressure cooker turned to the sauté mode. Add the beef mixture and sauté, stirring occasionally, until the beef is browned. Pour in the beef broth.

Close the pressure cooker and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 15 minutes. Use the Natural Release method to bring the pot to normal. Unlock and open the lid. Stir in sliced red bell pepper. Lock the lid again and allow staying for a further 5 minutes.

Unlock and open the lid. Stir cooked beef fajitas well. Remove from the pressure cooker and serve in warm tortillas with your favorite toppings!
