Slow Cooker Chicken Fajitas Recipe
Makes 4-6 servings
Ingredients: 2 pounds (960 g) boneless and skinless chicken breast halves, 14½ oz (435 ml) can diced tomatoes with green chilies, 1 red, orange, and green bell pepper, seeded and julienned, 1 large yellow onion, peeled, halved and sliced, 4 cloves garlic, peeled and minced, 2½ teaspoons chili powder, 2 teaspoons ground cumin, 1 teaspoon paprika, 3/4 teaspoon ground coriander, 1 teaspoon salt, 3/4 teaspoon freshly ground black pepper, 2 tablespoons freshly squeezed lime juice, 1 tablespoon clear honey
For serving: flour tortillas, sour cream, fresh chopped cilantro, salsa, guacamole, shredded cheddar cheese
Instructions: In a 6-quart (6 L) slow cooker, pour half of the canned tomatoes and spread them into an even layer. Arrange half of peppers and onions on the top. Sprinkle with minced garlic. Top with chicken breast halves.
In a small mixing bowl, combine chili powder, ground coriander, and cumin, paprika, salt, and black pepper. Mix well and sprinkle half of the spicy mixture over chicken halves, then flip chicken and with remaining spices. Top with remaining tomatoes and layer with remaining onions and peppers.
Cover slow cooker and cook on low heat setting for 6-8 hours or until chicken and vegetables are tender. Turn off slow cooker. Using tongs, remove chicken halves from the slow cooker. Transfer to cutting board and cut into strips.
Ladle out 1 cup (250 ml) of cooking liquid in a slow cooker and discard. In a small mixing bowl, combine lime juice and honey. Mix well and add the mixture to slow cooker along with the stripped chicken. Season to taste with salt and toss gently.
Serve chicken fajitas warm with flour tortillas, sour cream, guacamole, shredded cheese, and salsa.

Ingredients
- 1 large yello onion, peeled and cut into thin wedges
- 2 pounds (960 g) boneless beef sirloin steak, fat trimmed
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 grenn bell pepper, seeded and cut into thin srtips
- 1 red bell pepper, seeded and cut into thin strips
- 1/4 cup (60 ml) beef broth
- 8 whole wheat tortillas
- 1 cup shredded carrots
- 1 cup coarsely shredded fresh lettuce
- salsa, guacamole and sour cream
Method
Step 1
Place sliced onion in a slow cooker. Rub one side of beef steak with cumin, coriander, salt, and black pepper. Cut meat into the strips. Add the strips to slow cooker. Top with bell pepper strips and pour beef broth over.
Step 2
Cover slow cooker and cook on low-heat setting for 7-8 hours.
Step 3
Turn off slow cooker. Remove cooked beef and vegetables from the slow cooker. Transfer to a serving plate.
Step 4
Using a slotted spoon, spoon beef-vegetable mixture onto flour tortillas. Top each serving with shredded carrots and lettuce. Fold tortillas over. Serve with salsa, guacamole, and sour cream.
