This recipe has bacon in it because bacon gives the meatloaf a great flavor. Cook it, then crumble and mix in the ground beef. Ingredients
- 10-12 medium potatoes, peeled, washed and quartered
- 1 bay leaf
- 1 teaspoon kosher salt
- 2 garlic cloves, peeled
- 2 cups (500 ml) water
- 1 pound (480 g) lean ground beef
- 1 teaspoon garlic powder
- 1 tablespoon Worcestershire sauce
- 1 large egg, beaten
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup (60 ml) Italian seasoned bread crumbs
- 1/4 cup (60 ml) barbecue sauce
- 6 strips cooked bacon, crumbled
- 3 tablespoons unsalted butter
- 1/4 cup (60 ml) sour cream
- 1/4 cup (60 ml) milk
Method
Step 1
Place quartered potatoes in an instant pot. Add bay leaf, garlic cloves, then sprinkle with kosher salt. Pour in the water, making sure it covered potatoes and garlic cloves. Arrange the trivet on top of potatoes.
Step 2
In a medium mixing bowl, combine ground beef, garlic powder, Worcestershire sauce, beaten egg, seasoned bread crumbs, barbecue sauce, and bacon. Sprinkle with more kosher salt and black pepper. Mix thoroughly, using your hands.
Step 3
Place the meat mixture on the top of the non-stick foil, then transfer the foil to the trivet.
Step 4
Cover the pot and lock the lid. Set the machine to high pressure. Set the timer to cook at 20 minutes.
Step 5
Using the Quick Release method, bring pressure to normal. Unlock and open the lid. Lift the foil and transfer to a pan. Bast the top of the meatloaf with more barbecue sauce, then place under the broiler in your oven for 2 minutes.
Step 6
Meanwhile, remove the trivet and discard the bay leaf. Drain the water. Using a potato masher, mash cooked potatoes, adding butter, sour cream and milk. Serve with cooked meatloaf.
