Ingredients
- 1/2 cup (125 ml) reduced-fat mayonnaise
- 4 small cornichon pickles,chopped
- 1 tablespoon capers,drained,rinsed and chopped
- 1 tablespoon white wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon freshly ground black pepper
- 28 clams,scrubbed
Method
Step 1
To prepare tartar sauce: In a small mixing bowl, combine all ingredients, except clams. Stir well. Set aside.

Pour water into an electric pressure cooker. On a steamer tray, place the clams.
Step 3
Close the pot and lock the lid. Set the machine to cook to high pressure. Set the timer to cook for 7 minutes.
Step 4
Using the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Drain steamed clams in a large colander. Discard any that have not opened.
Step 5
Serve steamed clams with homemade tartar sauce on the side for dipping.
