Salsa chicken burritos. Today I wanted to share a meal that’s fast and easy to make. I like to make dishes with only a few ingredients. I also try to make them healthier if I can.
You can make these delicious Creamy Salsa Chicken Burritos in just 10-15 minutes! I think they are amazing! They are so versatile. The filling inside them is so yummy. There’s juicy chicken, vegetables, beans, rice, and lots of cheese.
Greek yogurt is the secret to making the filling so creamy, and no one needs to know! Make it as mild or as spicy as you like by choosing the type of salsa you use.
How to Make Filling for Salsa Chicken Burritos
Cook Chicken: Get a big skillet. Pour some olive oil into it. Sprinkle salt, pepper, chili powder, cumin, smoked paprika, and oregano on the chicken pieces. Put them in the skillet and cook over medium-high heat for 2-3 minutes until they are cooked.

Assemble Burritos
Warm up your tortillas in the microwave for 30 seconds. This will make them easier to fold and shape.
To make 8 burritos, lay out 8 tortillas. Place some rice, chicken, beans, rice, lettuce, and cheese on each one. Then, fold the tortilla in half, like a pocket. Finally, roll it up like a burrito.
Bake the burritos in the oven for 10 minutes at 350°F, wrapped in foil. You can also fry them in a pan over medium-high heat for two minutes on each side until the tortilla is crispy and the cheese melts.
Or, heat some vegetable oil in a large skillet over medium heat, then put the burritos in the skillet with the seam side down. Cook each side for three minutes until the burrito is golden brown.
Serve this dish with salsa and Greek yogurt.
Salsa Chicken Burritos
Ingredients
- 2 cups (500 g) shredded cooked chicken
- 14 oz (420 g) can black beans, drained
- 2 cups (500 g) plain nonfat yogurt
- 1 cup (250 g) salsa
- 1 teaspoon ground cumin
- 1 teaspoon garlic salt
- salt and freshly ground black pepper to taste
- 2 cups (500 g) cooked brown rice
- chopped fresh lettuce
- 1 1/2 cups (370 g) shredded cheese (Parmesan)
- 4 flour tortillas
Method
Step 1
In a large saucepan, combine yogurt, salsa, cumin, garlic, and seasoning. Stir until well combined and cook over medium-high heat.
Step 2
Stir in shredded chicken, drained black beans and 1/2 cup of shredded Parmesan cheese. Cook until cheese is melted.
Step 3
Heat tortillas in a microwave. Divide chicken mixture among warm tortillas. Top with cooked brown rice, chopped fresh lettuce and sprinkle of shredded Parmesan cheese.
Step 4
Roll up burritos and serve.
