Slow cooker apricot-almond stuffed chicken. Stuffed chicken breasts cooked in slow cooker.Couscous makes a delicious and simple base for this sweet-and-sour stuffing flavoured with dried apricots and crunchy toasted almonds.
A couple of spoonfuls of orange jelly marmalade adds tanginess to the sauce as well as thickening it slightly.
Sauteed spinach or steamed green vegetables makes a great accompaniment to this dish. They go particularly well with the sweet, fruity stuffing.
- 1/4 cup (60 g) dried apricots
- 2/3 cup (160 ml) orange juice
- 4 skinless and boneless chicken breast portions
- 1/3 cup (60 g) instant couscous
- 2/3 cup (160 ml) chicken stock
- 1 oz (30 g) chopped toasted almonds
- 1/4 teaspoon dried tarragon
- 1 egg yolk
- 2 tablespoons orange jelly marmalade
- salt and freshly ground black pepper to taste
In a small bowl, combine orange juice and dried apricots. Leave to soak at room temperature while you prepare remaining ingredients.
In another bowl, combine instant couscous and 1/4 cup (60 ml) chicken stock. Leave to stand for 2-3 minutes,or until chicken stock has been absorbed.
Drain soaked apricots, reserving the liquid. Stir them into couscous along with chopped almonds and tarragon. Season with salt and black pepper. Stir in just enough egg yolk to bind the mixture together.
Using a sharp knife, cut a deep pocket horizontally in each chicken breast portion (do not all the way through!) Place chicken breast portions between plastic wrap and gently beat them with a rolling pin until slightly thinner.
Divide apricot stuffing between chicken portions. Secure with toothpicks. Place stuffed chicken breasts in slow cooker.
In a mixing bowl, combine orange marmalade and remaining hot chicken stock. Stir until stock dissolved. Stir in orange juice. Season with salt and black pepper. Pour mixture over chicken breasts.
Cover slow cooker and cook on high-heat setting for 3-5 hours or until chicken is tender.
Remove cooked chicken breasts from the sauce and transfer to serving platter. Keep warm.
Pour sauce from slow cooker into a wide pan. Boil over high heat until reduced by half. Spoon sauce over stuffed chicken and serve immediately.
